Air Fryer Buffalo Chicken: Wings, Tenders, and Wraps

Buffalo chicken is one of those flavors that works on everything — wings, tenders, wraps, salads, you name it. The air fryer makes it ridiculously easy to get that crispy-outside, juicy-inside texture with the perfect amount of buffalo heat. Here are three ways to make it.

The Buffalo Sauce (Use for All Three Recipes)

This is the sauce you'll use across all variations. Make it first.

  • ⅓ cup Frank's RedHot (or your preferred hot sauce)
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • ½ teaspoon Worcestershire sauce

Whisk together in a bowl. The honey balances the heat and helps the sauce cling to the chicken. Adjust hot sauce up or down for your spice preference.

Recipe 1: Buffalo Wings

The classic. Air fryer buffalo wings rival any sports bar.

How to Adjust the Heat Level

| Heat Level | Hot Sauce Amount | Add | |------------|-----------------|-----| | Mild | 2 tablespoons | Extra 1 tbsp honey | | Medium | ⅓ cup (recipe default) | Nothing — it's balanced | | Hot | ½ cup | ½ tsp cayenne pepper | | Extra hot | ½ cup | 1 tsp cayenne + dash of habanero sauce |

Pro Tips

  1. Sauce hot chicken immediately — the sauce adheres best when the chicken is fresh from the air fryer
  2. Double the sauce — you always want more buffalo sauce than you think. Make a double batch
  3. Don't sauce before cooking — wet sauce on raw breading creates steam and sogginess
  4. Blue cheese > ranch — controversial take, but blue cheese is the traditional pairing for buffalo chicken. Try it
  5. Save leftover chicken — buffalo chicken keeps 4 days in the fridge and is perfect for salads, wraps, and rice bowls

FAQ

What hot sauce is best for buffalo chicken?

Frank's RedHot is the classic choice and what most restaurants use. It has the right balance of heat and tang without being overpoweringly spicy. Crystal and Cholula also work well for slightly different flavor profiles.

How do I make buffalo chicken less spicy?

Reduce the hot sauce to 2 tablespoons and increase honey to 2 tablespoons. The butter already mellows the heat, and extra honey adds sweetness that balances the spice. You can also use mild wing sauce instead of straight hot sauce.

Can I make buffalo chicken ahead of time for meal prep?

Yes. Cook the chicken (wings, tenders, or breasts) and store unsauced in the refrigerator for up to 4 days. Reheat in the air fryer at 375°F for 4-5 minutes, then toss with fresh buffalo sauce. The sauce stays better when added right before eating.
